Pumpkin pancakes



Well, I know nothing helps me to enjoy fall like tasting it! And nothing tastes like fall like pumpkin! I bet you've had pumpkin pie, maybe pumpkin bread, even less likely pumpkin cake, but have you ever had pumpkin pancakes?! Oh my, they are Deee-licious! I think my mom made them for us the first time, about three years ago. We're so glad she did- our family enjoys them several times each fall!

Original Recipe Yield 12 pancakes

Ingredients
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar

Directions
In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

My hubby usually makes these on Sundays (for lunch) and he doubles the recipe. He uses one can of pumpkin, it is not easy to save the rest of a can! We use a 15 oz or regular size can (one cup = 8 oz). When he doubles it, it can make up to 30 pancakes, which is plenty for our family and putting 6 or more in the freezer. It is a hearty breakfast, lunch or dinner!

Be sure to read the tips under the recipe at allrecipes, (by roksane) which include good ideas such as not to thin the batter with more milk. The batter is thicker and it just takes a little longer to cook. But they are worth the wait.

Anyone ever made pumpkin pie from a REAL pumpkin, not the canned version? Several years ago I bought a small baking pumpkin at Wal-mart and made it into a pie (the directions were on a sticker on the pumpkin). It was the best pumpkin pie I'd ever eaten! Now that's what I'm salivating for... :-D
