Zucchini Chocolate Cake
1/2 c. butter, softened
1 1/2 cups sugar
3 eggs
1/2 cup vegetable oil
3 tsp vanilla
1 3/4 cups flour
1/4 cup baking cocoa
2 tsp baking soda
1 tsp baking powder
1/2 tsp ground cinnamon
2 cups zucchini, shredded
1 cup chopped nuts
1/2 cup semi-sweet chocolate chips
Cream together butter and sugar. Add eggs, one a time, beating well after each egg. Beat in oil and vanilla. Combine flour, cocoa, baking powder, soda and cinnamon, gradually add to creamed mixture. Fold in zucchini and nuts.

Spread into greased 9 X 13" baking pan. Sprinkle with chocolate chips. Bake a 350 degrees for 30-35 minutes, or until a toothpick comes out clean. Makes 12-15 servings.

chocolate and zucchini together? the combination seems kind of scary but I guess I can't dis it til I've tried it right? My husband made me try Sardines the other day they aren't as bad tasting as they smell but not my cup of tea either lol
