Chocolate Zucchini Cake

A friend of mine gave me this delicious recipe several years ago, and it is a moist and delicious way to have chocolate cake! (and maybe a little healthier too...?) I made it recently with some zucchini that we'd been given, and it was a hit!
Zucchini grated and ready...

Zucchini Chocolate Cake
1/2 c. butter, softened
1 1/2 cups sugar
3 eggs
1/2 cup vegetable oil
3 tsp vanilla
1 3/4 cups flour
1/4 cup baking cocoa
2 tsp baking soda
1 tsp baking powder
 1/2 tsp ground cinnamon
2 cups zucchini, shredded
1 cup chopped nuts
1/2 cup semi-sweet chocolate chips

Cream together butter and sugar. Add eggs, one a time, beating well after each egg. Beat in oil and vanilla. Combine flour, cocoa, baking powder, soda and cinnamon, gradually add to creamed mixture. Fold in zucchini and nuts.
Ready to go in the oven...

Spread into greased 9 X 13" baking pan. Sprinkle with chocolate chips. Bake a 350 degrees for 30-35 minutes, or until a toothpick comes out clean. Makes 12-15 servings.

  3. I've made this before and it is a big hit in our family. If you like zucchini deserts you need to Google the recipe for Zucchini Custard Pie....amazing.


  4. chocolate and zucchini together? the combination seems kind of scary but I guess I can't dis it til I've tried it right? My husband made me try Sardines the other day they aren't as bad tasting as they smell but not my cup of tea either lol
