This is one of my mom-in-law's recipes and I made it just recently. I hadn't made it for a while, and it was delicious!
Here is the recipe:
Corn Skillet
3 T oil
3 potatoes, diced
1/2 large onion, chopped
1/2 green pepper, chopped
1 lb. corn, canned or frozen
1 tsp chili powder
1/2 tsp salt
1/4 tsp pepper
In large skillet, heat oil; add potatoes, stirring occasionally to brown evenly. When potatoes are almost done, add onions and green pepper. When onions start to brown, add corn, chili powder, salt and pepper. Stir thoroughly to blend all ingredients. Cover and lower heat. Continue cooking until everything is hot.
This is a great one-skillet dinner!
When I made it this week, we were out of onions, so I omitted them and it was still delicious! I added yellow peppers too, another sweet addition!
