Meatloaf recipe


This is one of my favorite recipes from the MOPS cookbook, Beyond Macaroni & Cheese, edited by Mary Beth Lagerborg and Karen J. Parks. It's a family-friendly cookbook, well-used here!

"Best- Ever Meatloaf"
Ingredients:
2 eggs
2/3 milk
3 slices bread, torn in pieces
1/2 c. onion, chopped
1/2 c. carrot, grated
1 cup cheddar or Mozzarella cheese, shredded
1 T fresh or 1 tsp dried parsley
1 tsp basil
1 tsp basil
1 tsp salt
1 tsp pepper

Topping:
1/2 tomato sauce
1/4-1/2 cup brown sugar (depends on if you like it sweeter)
1 tsp dry mustard

supplies set out...
Directions:
1. Preheat oven to 350 degrees.
2. In large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed.
3. Stir in onion, carrots, cheese, and seasonings. Add beef, mix well (use hands to mix).

MIXING IT UP...

4. In a shallow baking pan shape mixture into a 7" x 3" x 2" loaf. Bake 45 minutes.

5. Meanwhile, combine topping ingredients. Spoon a portion over meatloaf. Bake 30 minutes longer, adding topping occasionally. 


Let stand 10 minutes before serving. Serves 6.
SERVE WITH POTATOES, SALAD OR VEGGIES.
You can substitute 1 cup of crushed saltine crackers for the bread in this recipe; it lends a slightly different texture and flavor.
