Mostacholi recipe

This is one of my mom's recipes. My hubby loves it, but it is a little bit of work. So unfortunately, I don't make it too often. But fortunately, she makes it for us nearly every time we come home to their house! :-D Hope you enjoy it too!

Mostacholi
1 box Mostacholi or penne pasta noodles (16 oz)
1 large can chopped tomatoes
2 large green peppers, cut into big squares
1/3 or 1/4 white onion, chopped or sliced
2 cloves minced garlic
large sprinkle of Oregano
1 lb Italian sausage
8-12 oz. pkg sliced Mozzarella cheese
small can tomato paste
salt & pepper to taste
8 oz water

Cook noodles by package directions. Brown sausage, add onions, green pepper and garlic, being careful not to scorch. Pour off excess grease. Add tomatoes and seasoning, add paste and water. Simmer, add salt and pepper.

Spray bottom and sides of casserole dish with oil spray. Layer 1/2 cooked noodles, 1/2 sauces and 1/2 pkg cheese. Repeat. Sprinkle with parmesan cheese. Cook while ingredients are hot for 30 minutes at 350 degrees. If made ahead and chilled, cook for one hour. Cover for part of cooking time, then take off cover for last 15 minutes to brown the cheese.
