"Perkins" Chicken Salad
This is a "green salad", with lettuce, tomatoes, snap peas, avocados, celery, onion, green pepper, carrots, etc., Cook two or three chicken breast patties in the microwave according to package directions. Allow them to cool slightly, and slice into 1/2" strips. Add to top of salad. Serve with dressing.
(This is called "Perkins" Chicken Salad, because it is similar to what is served in the Perkins restaurant.

Salad #2 is one of my personal favorites. I love the sweet, savory & crunchy tastes all mixed together!
Cold Chicken Salad
2 breasts of chicken (or 3, if need)
1/2 white onion, chopped, (or green, if desired)
1 cup grapes, halved
1/2 cup sliced almonds
chopped celery (one-two stalks)-optional
1 cup (approx.) mayonnaise
1-2 tsp apple cider vinegar
2 tsp celery seed
Boil chicken breasts on stove until done (check by cutting into it). Cool and chop into 1/2" pieces/ Add other ingredients and chill for an hour, at least.
Serve on croissants with chips.

These are two very popular salads in our home, and my kids often refer to chicken patties as "chicken with fur on it." Lol!

I'm going to try the cold chicken salad this week. Costco sells cans of cooked chicken, so I'm going to try that and it should make it even easier!
