Green Chile Burritos

As I was making this dish the other night, the kids were asking me what was for dinner.

"Burritos", I told them.

 "What?!" Mallory said.  "I don't know what that is, Mom..."

"Well, it's like tacos, but baked in the oven. It has meat, rice, beans, cheese, all things you like."

"Oooh, yum, yummy, yum! That sounds good, Mom!" Mallory said. Then the silly girl proceeded to eat nearly nothing!

This is a scrumptious recipe that I got from my sister-in-law. I don't *think* she's posted it on her blog...
My hubby stopped by their house recently and she was making these for dinner. He asked for them, and I remembered how much I liked them too.
Ready to load up...

Green Chile Burritos
15 oz can refried beans
1 lb ground beef or turkey
cooked rice (I make 1 1/2 cups measured dry)
1/2 cup onions, chopped
chopped olives
grated cheese
6-8 tortillas
15 oz can Green Chile sauce
Loaded and ready to bake!

Spray 8" square baking dish with oil spray. Put 1/4" of the sauce in the bottom of the pan to coat. Fill and roll tortillas with beans, rice, beef/onion cooked mixture, olives and cheese. Place into baking dish and cover with green chile sauce. Add cheese to the top, and top with sprayed foil (or it will stick to the sauce/cheese). Bake at 375 degrees for 30 minutes, unless all ingredients are pre-cooked, then bake for 15 minutes. Enjoy with sour cream and salsa! YUM!

And they're really good as leftovers the next day, too!

  1. Mmmmm .... might have to have those next week. Such a great winter meal! And you can double it and put one pan in the freezer for the next time!
