Apple Puffed Pancake Recipe

Here is another family favorite recipe of ours, usually when we make it, it is ALL gone! This is another recipe of my mom's, and similar to a recipe of my mom-in-law, of her "Dutch Baby".

My daughter Rebekah has made this for us several times, and once she had an accident where she spilled it while placing the pan into the oven. Oops! We cleaned that one up for a while. :-(


Apple Puffed Pancake
6 eggs
1 1/2 c milk
1 c flour (white or wheat)
1 1/2 Tbsp honey
1 tsp vanilla
1/4 tsp cinnamon
1/2 c butter
2 apples--peeled and thinly sliced
2-3 Tbsp brown sugar

Batter mixed up, a little lumpy...

Ready to go in the oven...


Preheat oven to 425 degrees. Mix eggs, milk, flour, honey, vanilla and cinnamon in a blender or large bowl until blended. If using mixer, batter will remain lumpy. Melt butter in a 9 X 13" baking pan in oven. Add apple slices to pan. Return to oven until butter sizzles. Do not let brown. Remove from oven and pour batter over apples. Sprinkle with brown sugar (optional). Bake in middle of oven for 20 minutes or until puffed and brown. Serve hot. We put butter and syrup on it, but it really doesn't need either one, it is pretty sweet as is...

All done- puffed and delicious!
I think the wheat flour may not puff as much as white flour...
