Some of you may have seen this recipe in the Parade magazine in August, as I did. I thought it would be fun to try, and it was delicious entertainment for our whole family!
Veggie Pizza Faces
Ingredients:
4 whole-wheat pita rounds (6 inch pitas work best)
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
4 Tbsp ranch dressing
1 cup fresh, pre sliced vegetables such as carrots, tomatoes, zucchini, bell peppers, onions and broccoli
1/4 cup sliced pitted black olives
Pepperoni, ham-- optional
Directions:
1. Preheat the oven to 375 degrees.
2. Place the pitas on a nonstick baking sheet.
3. Spread 2 Tbsp pizza sauce on each, sprinkle with cheese.
4. Using the dressing as "glue", arrange the vegetables on the pitas to look like silly faces.
5. Bake the pizza faces for 10-12 minutes or until the cheese melts.
A few other options for this recipe:
-We used pepperoni and ham pieces when we made it, to add more meat & protein.
-We also used marinara/ pizza sauce instead of ranch dressing, since our daughter is sensitive to dairy.
-You can use English muffins instead of pitas.
-Great way to get kids to eat their veggies!
Fun! Reminds me of when the kids made "monster burgers" with cheese cut to look like teeth. :)
